Caramel Corn

55g popcorn
25g butter
¼ tsp salt

150g sugar
Water

50g honey
65g glucose

7.5g butter

1. Pop popcorn with butter and salt, keep warm.
2.  Put sugar in pot, add enough water to create wet sand, should be a thin layer of water on top. Stir, wash down sides. Bring to boil.
3.   Add honey and glucose to sugar mixture and cook to a golden caramel. Plunge pot in ice bath when color is achieved.
4.  Add butter.
5.  Place popcorn in a bowl, slowly add caramel while moving and stirring popcorn.
